Walnut potica
Walnut potica festive time is here.
Potica, synonym for festive events, is a spiral rolled Slovenian festive cake. The recipe for potica cake is passing from one generation to another. Nut bread baking is a challenge for all of us. We need to use our own creativity and try to make potica many times before we can proudly say: “This is potica I was looking for!”
There are many potica bread varieties following the seasons (potica with carob, cracklings, honey, tarragon, chives, cottage cheese, poppy seeds, carrots, raisins, dried fruit, Carniolan sausage, walnuts).
Are you ready to make your own festive cake?
Dough:
60 grams of yeast
560 grams of white flour
280 grams of butter
80 grams of sugar
4 whole eggs
4 egg yolks
1 vanilla sugar
Mix all the ingredients together and leave a dough for 2 hours in the fridge.
Filling:
Boil 250 milliliters of milk with 300 grams of sugar. Then add 600 grams of ground walnuts, 1 vanilla sugar. When the filling cools down, add a bit of lemon juice and 4 snow whites.
After 2 hours, take the dough out from the fridge and divide it into 2 parts. Knead the dough. Then spread the filling on both parts, add raisins soaked in rum and roll the dough. With a toothpick make some holes on the dough. Bake it for 1 hour on 180 degrees.
